A great deviled eggs recipe to try !

Deviled Eggs Recipe INGREDIENTS
  • 12 hard-boiled eggs
  • 1/3 cup sour cream
  • 1/4 cup mayonnaise
  • 2 TBS. snipped fresh chives
  • 1 tsp. dijon mustard
  • 1 tsp. lemon juice
  • salt and pepper, to taste

Deviled Eggs Recipe INSTRUCTIONS
1. Peel eggs and cut in half lengthwise. Scoop out egg yolks from 11 eggs into bowl. Scoop out remaining egg yolk and set aside. Chop four egg-white halves and add to bowl. Mash yolks and whites with fork.
2. Add remaining ingredients to bowl and stir until smooth. Pipe or spoon filling into egg-white halves.
3. Put remaining egg yolk in a fine, mesh strainer. Mash yolk with fork, holding strainer over the eggs to sprinkle as a garnish. The deviled eggs recipe is ready to serve cold. Makes 20 deviled egg halves.

Crabmeat Deviled Eggs

Deviled Eggs Recipe INGREDIENTS
  • 1 dozen eggs
  • 1 tablespoon dijon mustard
  • 1 tablespoon fresh lemon juice
  • 3 heaping tablespoons mayonnaise
  • 1/2 tsp salt (or more to your taste)
  • 1/2 tsp cayenne pepper (alternative is ¼ to ½ tsp hot sauce)
  • 1/2 pound lump crabmeat
  • 1 tsp paprika (optional)

Deviled Eggs Recipe INSTRUCTIONS
Place the eggs in a pot of water. Bring to a boil for about 10 minutes. Remove from heat, drain and run cold water over eggs until you can handle them.

Peel eggs and cut in half lengthwise. Remove the yolks from the whites and place yolks in a medium size bowl. Use a regular table fork to mash the yolks and then add all the other ingredients except paprika. Mix well. If the consistency is not creamy enough, add more mayonnaise as desired. Fold in the crab meat to try to maintain the lumps.

Spoon equal amounts of the yolk mixture into the egg white cups and dust tops lightly with paprika (optional). Best when chilled before serving.

Alternative for a more eggy treat: The prepared eggs may be topped with salmon roe or caviar for a more formal presentation. For this you might want to leave off the paprika dusting.

Homemade Mayonnaise and Devilled Eggs

Homemade Mayonnaise and Devilled Eggs

For the Mayonnaise:
  • 1/4 cup olive oil
  • 3/4 cup Canola oil
  • 1 whole egg
  • 1 egg yolk
  • 1 tsp Dijon Mustard.
  • Salt, pepper and lemon juice to taste
-Put the eggs, mustard and 1/2 tsp salt in a blender
-Pulse until blended
-Blend the oils together in a jug with a spout for pouring
-With the blender switched on, very slowly pour the oil into the blender
-Start with an extremely thin dribble
-As the mayonnaise thickens you can start pouring a more steady stream
-Season to taste with lemon juice, salt and pepper.

For the Devilled Eggs:

Simply hard boil some eggs then carefully remove the yolks. Blend them together with whatever takes your fancy from the following list: mustard, paprika, green onions, mayonnaise, horseradish, etc. On this occasion I was too heavy-handed with the mayonnaise and the Dijon and the mixture became to runny to pipe back into the egg whites properly. But with the homemade mayo, a generous dollop of spicy French mustard and a sprinkling of smoked paprika, they tasted just perfect.
